It was a day to take it easy and Mrs. Cavanaugh's Chocolate Candy factory was just down the street in North Salt Lake City, UT. We called and made an appointment for a 10:30 tour. The tour started by watching one of the 20+ year veterans hand-making chocolate peanut clusters. Here she is "tempering" the chocolate. If it is not just the right temperature the clusters do not hold their shape. This particular process is called "roping" the chocolate to cool it down.
I love that a laser temperature gun is a tool of the trade!
From an upstairs overlook, we could see all of the factory floor. Our guide, Angie, pointed out and explained the operation of every machine. She had worked at most of the stations herself in the years she had been there. Mrs. Cavanaugh's is truly a family owned and operated small business that was a pleasure to visit.

Each little squiggly on the top of the candies is done with a touch of the finger to warm chocolate and identifies the filling. Some are letters and some are shapes.
The caramel and cashew morsels, being dipped in white chocolate, are out of this world!
Thank you, Angie, for the best ice cream I have EVER tasted (the Penoche was incredible!)
We bought some assorted candies, but it was not enough! Rationing it made it last only a few days - wow, it was fantastic!
